Michel Couvreur is dubbed the last of the Mohicans because he is the last Whiskey craftsman. He began to distill Edradour and still uses small distilleries, demanding the production of every production phase according to his indications. For aging, Couvreur continues to use Sherry's barrels according to Scottish tradition. Scotland's cleanest waters are used to reduce the alcohol content. Candide is a Whiskey Single Malt aged in Pedro Ximenex's barrels. Distilled in October 2000 and refined first in normal oak barrels and then in Pedro Ximenez barrels, which give the distillate a more harmonious character.
