The new limited edition rum Don Papa Rye Aged Rum ages for four years in American rye whiskey barrels at the foot of Mount Kanlaon on the island of Negros in the Philippines.
Rum Don Papa or The Don, was inspired by the story of one of the celebrated heroes of the Philippine revolution: Dionisio Magbuelas, better known locally as "Papa" Isio.
Initially a sugar plantation foreman, Papa Isio - healer, shaman, seer, rebel, and the leader of a group of babaylanes - played a pivotal role during the late 19th-century Philippine Revolution.
The spirit of Papa Isio and his leadership played a vital role in freeing Negros from Spanish rule, ultimately bringing independence for his beloved country.
Rum Don Papa Rey Aged embodies the spirit of independence of Papa Isio, irreverence and sense of justice combined with the poetry of the era of American Prohibition, when in the 1920s most whiskeys were produced with Rye, a predominantly rye based .
Distilled from some of the best sugar cane in the world, Don Papa Rey aged rum is aged for four years in American rye whiskey barrels at the foot of Mount Kanlaon on the island of Negros in the Philippines.
The resulting liquid is marked on the nose as "radiant and fruity" with spicy tones of black pepper, salted caramel and a hint of fresh mint and cedar wood.
The taste is “deep, intense and velvety” while the surface is soft and smooth.
“Imagine a lush green rye field on a beautiful Tennessee spring day combined with a warm tropical shower blowing from the Philippine Sea,” said Stephen Carroll, owner of Don Papa.
"This is the backdrop for the aged Don Papa Rye rum - it combines the intense spicy notes of American rye barrels and our molasses rum, resulting in a wonderfully balanced, silky and complex new rum."
Where there is rum, you will find Don Papa .... but you will hardly find the Rey aged limited edition.

Don Papa Rye Aged Rum has a beautiful golden color, the result of the union between the green rye fields of the United States and the fresh sea breeze of the Philippines, a mix that gives the distillate the sweet notes characteristic of molasses, but also spicy hints , vegetal and intense aging, carried out in ex-American Rye Whiskey barrels.
The final result is a rum with dry and spicy notes, which on the palate leaves hints of honey and pepper, with a very delicate finish tending to apple and with a slightly savory note due to the wood of the ex-rye barrels.
